Ingredients

Method

You’ll need: high-speed blender · chopping board · knife · sieve

  1. Wash the green apples, celery, cucumber, spinach and unwaxed lemon thoroughly. Roughly chop the apple, celery, cucumber and lemon, and peel the ginger.
  2. If you want to use the lemon with its peel, only use an unwaxed lemon and remove the pips. This keeps the flavour fresh without it turning too bitter.
  3. Put the green apples, celery, cucumber, spinach, lemon and ginger in a high-speed blender. Blend until the texture is even and smooth.
  4. If the juice is too strong or too fibrous for you, push it through a fine sieve. This makes the texture clearer and milder.
  5. Taste briefly: if the ginger is very intense, a little more cucumber or apple in the next batch helps. The balance can stay fresh and green.
  6. Pour into a glass and serve straight away. If you like, garnish with a thin slice of lemon or some finely chopped celery leaves.

Good to know

Sometimes all you want is something fresh in a glass. This green juice tastes crisp, light and pleasantly lively.

Swaps

Green apples → Granny Smith apple or green pear (similarly fresh, a little more fibre with pear) Celery → fennel (milder, also contains potassium and plant compounds) Cucumber → raw courgette (very watery, mild flavour, a little more potassium) Spinach → kale or romaine lettuce (more vitamin C with kale, milder and lower in nitrates with romaine) Unwaxed lemon → lime (similar vitamin C content, a little more aromatic) Ginger → fresh turmeric (contains curcuminoids; earthy and spicy rather than hot)

Allergens

Celery is one of the allergens that must be declared; for children and during pregnancy the juice is usually fine, but ginger and citric acid can be quite intense if you have a sensitive stomach.

Frequently asked questions

Which vitamins does this green juice mainly contain?

Mainly vitamin C from the lemon and apple, plus folate and vitamin K from the spinach. The exact amounts depend on the size of the ingredients and whether you sieve the drink.

Is the oxalic acid in spinach an issue?

Spinach contains oxalic acid, that's well known. For most people this isn't a problem in normal amounts; if you're prone to certain kidney stones, it's worth looking at it individually.

Why can celery be a problem for some people?

Celery is a common allergen and therefore has to be declared. Even small amounts can cause symptoms in sensitive people.

Does the lemon provide only vitamin C or more?

Besides vitamin C, lemon adds citric acid and small amounts of other plant compounds. If you use some of the peel, you also get aromatic compounds from its essential oils.
