Vegan Greek oven-roasted lemon potatoes
Vegan Greek lemon potatoes from the oven: potato wedges cooked in stock with lemon, olive oil, garlic and oregano until crisp. A side for dinner, gluten-free.
Preheat the oven to 200 °C (180 °C fan). Peel the potatoes and cut them lengthways into wedges.
Grate the zest of one lemon and squeeze both lemons. Mix the juice, zest, olive oil, crushed garlic, oregano, salt and pepper.
Toss the potatoes with half the marinade and spread them in a single layer in a large baking dish. Pour in the vegetable stock.
Bake the potatoes in the oven at 200 °C for 30 min. Turn them and pour over the rest of the marinade.
Bake for a further 20 min at 200 °C, until the stock has been absorbed and the edges are brown and crisp.
Chop the parsley and scatter it over the potatoes.
Good to know
Patates lemonates are on the menu at every Greek taverna, and on TikTok they're a perennial favourite as lemon potatoes. First the potatoes soak up stock and lemon juice, then they turn crisp in the oven. Soft inside, brown outside and pleasantly sharp.
Swaps
Potatoes → sweet potatoes (sweeter, 10 min shorter). Vegetable stock → water with an extra pinch of salt. Oregano → thyme. Side → main: add a tin of chickpeas for the last 20 min.
Cooking tips
Spread the wedges in a single layer, otherwise they steam instead of browning. Only pour in enough stock to cover the bottom of the dish.
Storage
Leftovers keep for 3 days in the fridge and crisp up again in the oven or air fryer at 200 °C in 8 min.
Allergens
Vegan; no milk, egg or nuts; gluten-free if the stock is gluten-free.
