Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. Peel the red grapefruit, remove the white pith where possible and divide the flesh into pieces. Finely grate the ginger.
  2. Put the soya yoghurt in a bowl with the chia seeds and grated ginger. Stir briefly so the chia seeds swell evenly.
  3. Carefully fold in the grapefruit, or roughly crush it with a fork if you'd like a juicier texture. Roughly chop the almonds.
  4. Leave the bowl to stand for a few minutes until the chia seeds have thickened slightly. Stir gently once more if needed.
  5. Sprinkle with the chopped almonds and serve straight away.

Good to know

Fresh, slightly bitter and lovely and creamy. This bowl is refreshingly uncomplicated. Just right when you want something cool with a bit of bite.

Swaps

Grapefruit → mixed berries (fewer interactions with medicines, more fibre) Soya yoghurt → unsweetened coconut yoghurt with added pea protein (soya-free) Chia seeds → ground linseed (similar fibre content, provides omega-3 fatty acids) Chopped almonds → walnuts (more alpha-linolenic acid)

Allergens

Contains soya and almonds (tree nuts). For small children, use chia seeds with care; grapefruit can interact with certain medicines, which can matter in pregnancy and generally if you take regular medication.

Frequently asked questions

Which nutrients are in red grapefruit?

Red grapefruit mainly provides vitamin C, plus smaller amounts of folate and potassium. The red colour comes from carotenoids, including lycopene depending on the variety.

What do chia seeds bring to this bowl?

Chia seeds provide fibre, magnesium and plant-based omega-3 fatty acids in the form of alpha-linolenic acid. They swell a lot and change the texture considerably.

Does ginger suit a sensitive stomach?

Not necessarily. With a sensitive stomach or reflux, fresh ginger can taste quite hot, so start with a small amount.

What should I look for in soya yoghurt?

Unsweetened soya yoghurt with as short an ingredients list as possible makes sense. If it's fortified with calcium and vitamin B12, that's a useful addition to the bowl.

Is there anything to watch out for with grapefruit and its ingredients?

Yes. Grapefruit contains substances that can affect how certain medicines are broken down – that matters more than most general nutrition tips about the fruit.
