Ingredients

Method

You’ll need: high-speed blender · chopping board · knife · sieve

  1. Wash the carrots and sweet apples well. Core the apples and cut everything into rough chunks.
  2. Put the carrots, apples and a squeeze of lemon juice into a high-speed blender. Add a little water and blend until the juice is completely smooth.
  3. If you like it finer, push the mixture through a sieve or a cloth. This makes the juice clearer and easier to drink.
  4. Stir in the cold-pressed linseed oil only at the very end. That way its own flavour stays pleasant and the delicate fatty acids aren't exposed to heat or air for long.
  5. Taste and, if needed, balance with another small squeeze of lemon juice.
  6. Pour into a glass and serve straight away. It tastes most rounded when fresh.

Good to know

Sometimes the simple things are the best. This juice tastes soft, fresh and nicely rounded.

Swaps

Linseed oil → avocado (creamier, natural fats without seed oil) Linseed oil → creamed coconut (mild sweetness, more body, no seed oil) Sweet apples → pear (milder flavour) Lemon juice → lime juice (fresher, a little more aromatic)

Allergens

The recipe contains none of the major allergens. For small children, keep the juice mild and not too sour. During pregnancy the ingredients are fine in normal kitchen amounts, as long as the linseed oil is fresh and good quality.

Frequently asked questions

Why is there linseed oil in the juice?

Linseed oil mainly provides alpha-linolenic acid, a plant-based omega-3 fatty acid. It's sensitive to light, air and heat, so it only goes in at the end.

What's in carrots, nutritionally?

Carrots are best known for beta-carotene, the precursor of vitamin A. They also contain smaller amounts of potassium and other carotenoids.

What should I know about apples in juice form?

It varies from person to person. Apples contain fructose and sorbitol, which in larger amounts can cause bloating or discomfort in sensitive people.

Does the lemon juice add much nutritionally here?

In this small amount it's mainly about freshness and a bit of acidity for balance. It does contain vitamin C, but not much in a single squeeze.

Is linseed oil suitable for children and during pregnancy?

In small kitchen amounts, yes, as long as it's fresh, cold-pressed and not rancid. Think of it as an ordinary food, not a wonder product.
