Pour boiling water over the glass noodles, let them soak, then drain well.
Wash the okra, slice it into thin rings and fry it briefly in a non-stick frying pan until lightly browned.
Squeeze the lime and slice the chilli into thin rings.
Stir the peanut butter, soy sauce, lime juice and chilli into a smooth dressing.
Toss the glass noodles and okra thoroughly with the dressing so everything is evenly coated.
Plate the vegan glass noodle and okra salad and finish with a sprinkle of sesame seeds.
Good to know
A salad like this takes little effort and still tastes exciting. The sauce is creamy, the lime brings freshness, and the okra gives the whole thing a special texture.
Swaps
Peanut butter → almond butter (also provides unsaturated fats and vitamin E); soy sauce → tamari (similar flavour, often gluten-free); sesame seeds → chopped cashews (bring magnesium and a bit more bite); glass noodles → rice noodles (similarly delicate, slightly different texture)
Allergens
Contains peanuts, sesame and soya. Go easy on the chilli for children, and during pregnancy the recipe is generally no problem with fresh, cleanly prepared ingredients. Contains: gluten (soy sauce).
