Vegan gingerbread overnight oats with mandarins and hazelnuts
Vegan gingerbread overnight oats made with oats, chia seeds, soya milk and soya yoghurt, topped with mandarins and hazelnuts. A make-ahead breakfast with 18 g protein per jar.
Mix the oats, chia seeds and gingerbread spice in a bowl.
Stir in the soya milk, soya yoghurt and maple syrup until there are no lumps left.
Divide the mixture between two jars, seal them and chill overnight, for at least 6 hours.
Peel the mandarins and separate them into segments. Roughly chop the hazelnuts and toast them in a dry frying pan for 3 min.
Stir the oats in the morning and add a splash of soya milk if needed.
Top with the mandarins and hazelnuts and eat the oats cold or warmed in the microwave for 1 min.
Good to know
Ten minutes in the evening, and in the morning you just take the lid off. The gingerbread spice soaks into the oats overnight. Mandarins and toasted hazelnuts go on fresh at the end.
Swaps

Cooking tips
Stir the oats again after 10 min, or the chia seeds will settle at the bottom. If you like it warm, heat the jar without its lid.
