Ingredients

Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the cucumber, pear and mint leaves thoroughly. Roughly chop the cucumber and pear so everything blends evenly.
  2. Core the pear and put it in the blender with the cucumber. Add the mint leaves and lemon juice.
  3. Blend until the juice is smooth and fresh. If you like it thinner, pour it through a fine sieve.
  4. Taste and balance with a little more lemon juice if needed. The mint should stay fresh without taking over.
  5. Pour the juice straight after blending so the flavour and colour stay bright.
  6. Fill a glass and serve immediately. Garnish with a mint leaf if you like.

Good to know

A juice like this feels gentle and fresh. Mild, simple, uncomplicated. Just right when you want something cool in a glass.

Swaps

Pear → green apple (a little more acidity, also contains fibre); mint → lemon balm (mild flavour, also contains plant compounds); lemon juice → lime juice (similar acidity, also provides vitamin C); cucumber → celery (more savoury, with fibre and potassium; celery is an allergen).

Allergens

The recipe is vegan and contains none of the major allergens. If you have a birch pollen allergy, pear can sometimes cause a cross-reaction; for children and in pregnancy, the juice is fine in normal amounts.
