Wash the celery and cucumber and cut them into pieces that fit your juicer. Wash the apples, quarter them and remove the cores.
Peel the ginger and the lemon – this makes the juice milder and helps it juice more evenly.
Put the apple, cucumber and lemon through the juicer first, then the celery and ginger.
If you don't have a juicer, blend all the ingredients finely with a little water and press the pulp through a nut milk bag or a fine sieve.
Stir the juice well so everything combines evenly.
Serve the juice over ice cubes and drink it straight away.
Good to know
A juice like this tastes like a fresh start without being loud. Clear, green and pleasantly spicy – just right when you fancy something light.
Swaps
Green apple → pear (milder, a little more fibre in the pulp). Cucumber → fennel (also contains lots of water, with a slightly bitter note). Lemon → lime (similarly fresh, with vitamin C). Ginger → fresh turmeric (earthier flavour and a golden colour).
Allergens
Celery is one of the allergens that must be declared on labels; generally fine for children and in pregnancy, but keep the ginger and acidity mild and go carefully if your stomach is sensitive.
