Ingredients

Method

You’ll need: juicer · chopping board · knife

  1. Wash the fennel bulb thoroughly and cut it into long, narrow pieces so they fit easily into the juicer.
  2. Wash the pears, remove the cores and cut them into pieces.
  3. Pick the mint leaves from the tough stalks. Peel the lime and remove as much of the white pith as possible so the juice stays milder.
  4. Juice the fennel first, then the pears. Add the mint and lime to the juicer in between so everything combines evenly.
  5. Stir the juice briefly after juicing and taste it. If you like it cooler, chill it briefly before drinking.
  6. Serve the vegan fennel and pear juice in glasses straight after making it and garnish with a few mint leaves if you like.

Good to know

Some juices are loud; this one is quiet and clear. Fresh, green and with a subtle sweetness that doesn't take over.

Swaps

Pear → green apple (a little more acidity, also has fibre in the flesh); Lime → lemon (similar profile with vitamin C); Mint → lemon balm (mild herbal note, also contains plant aroma compounds); Fennel → celery (fresh, savoury note, also contains small amounts of fibre and potassium).

Allergens

Individual cross-reactions to fennel, pear, lime or mint are possible. Only give children small amounts because of the acidity, and during pregnancy the ingredients are unremarkable in normal food amounts.
