If the dates are firm, soak them briefly in warm water, then drain them well.
Put the walnuts, dates, cocoa powder, chia seeds and a small pinch of salt in a blender or food processor.
Blitz everything in short bursts until you have a sticky, slightly crumbly mixture that holds together when pressed.
With slightly damp hands, shape the mixture into small balls.
Roll the balls in the desiccated coconut until they are coated all over.
To serve: chill the energy balls briefly before eating, or enjoy them straight away. In an airtight container in the fridge, they keep for several days.
Good to know
These little balls are quick to make and refreshingly uncomplicated. Sweet, nutty and just right when you want something handy between meals.
Swaps
Walnuts → almonds (a little milder in flavour, contain vitamin E); chia seeds → ground linseed (fibre and plant omega-3 fatty acids); desiccated coconut → finely chopped pistachios (also provide protein and minerals); cocoa powder → carob powder (caffeine-free, naturally milder and sweeter)
Allergens
Contains walnuts (tree nuts), so not suitable for anyone with a nut allergy. For children, only offer them small and easy to chew. In pregnancy, the ingredients are generally fine in normal amounts.
