Soak the dates briefly in hot water, drain, then blend them with the almond butter and a pinch of salt into a smooth, mouldable paste.
Put the date paste on baking paper and roll it out into an even rectangle.
Dust the surface with the cocoa powder and press it lightly into the date paste.
Scatter the chopped walnuts over the top and press them on gently so everything holds together when you roll it up.
Using the baking paper to help, roll the rectangle up tightly and chill the roll until firm.
Cut the roll into small pinwheels and serve well chilled.
Good to know
These pinwheels are sweet, soft and refreshingly unfussy. They're reminiscent of confectionery but need hardly any preparation. In the fridge they firm up nicely for slicing.
Swaps
Almond butter → cashew butter (milder flavour, usually a little creamier) | Walnuts → pecans (similar fats, slightly sweeter aroma) | Cocoa powder → cinnamon (less bitterness, very aromatic) | Walnuts → chopped hazelnuts (contain vitamin E, a firmer bite)
Allergens
Contains tree nuts, so it isn't suitable for anyone with a nut allergy; for children only in small pieces that are easy to chew, and generally fine in pregnancy.
