Wash the cucumber, carrots, rocket and lemon thoroughly. Cut the cucumber and carrots into bite-sized pieces or thin strips.
Tip the chickpeas into a sieve, rinse and drain well. Stir the hummus with the tahini and a little lemon juice in a bowl until smooth.
Put the cucumber, carrots, chickpeas and rocket into a bowl. Spoon the creamy hummus and tahini dressing over the top.
Toss everything together gently, or leave it loosely layered. Sprinkle with sesame seeds and add more lemon juice to taste if needed.
If you like it a little softer, finely grate the carrots instead of cutting them. That way the bowl comes together even better with the dressing.
Arrange in a bowl and serve straight away.
Good to know
This bowl is easy and still looks the part. Creamy, fresh and properly substantial. Just right when it needs to be quick and you want something real to eat.
Swaps
Rocket → lamb's lettuce (milder flavour, also contains folate). Tahini → almond butter (provides unsaturated fats and some vitamin E; contains tree nuts). Chickpeas → white beans (similar fibre content, slightly softer texture). Sesame seeds → chopped walnuts (more omega-3 fatty acids than sesame; contain tree nuts).
Allergens
Contains sesame (tahini, sesame seeds, hummus), and depending on the hummus it can contain other allergens. Usually fine for children if the texture is adapted, and in pregnancy, thoroughly washed, fresh ingredients matter.
