Ingredients

Method

You’ll need: frying pan · blender · chopping board · knife · sieve

  1. Drain the cashews and blend them with fresh water into a smooth, fine cream. Keep the vegetable stock warm at the same time.
  2. Slice the mushrooms and king oyster mushrooms and fry them in olive oil over a high heat until golden brown. Salt lightly and set aside briefly.
  3. Soften the onion and garlic in olive oil until translucent. Add the risotto rice and toast briefly until the grains look slightly translucent.
  4. Deglaze with the white wine and stir until the liquid has almost been absorbed. Then work in the warm vegetable stock a little at a time, stirring regularly, until the rice is creamy and still slightly al dente.
  5. Stir in the cashew cream and nutritional yeast. Fold in the mushrooms and thyme and season to taste with salt and pepper.
  6. Serve straight away. The risotto should flow softly rather than stand firm on the plate.

Good to know

This risotto is creamy without feeling heavy. The cashew cream rounds it off, and the mushrooms bring depth and lots of flavour.

Swaps

Cashews → white bean purée (also creamy, provides fibre) | white wine → more vegetable stock with a small squeeze of lemon juice (alcohol-free, similarly fresh) | mushrooms → chestnut mushrooms or oyster mushrooms (often a little stronger in flavour)

Allergens

Contains tree nuts (cashews); nutritional yeast doesn't suit everyone. For children and in pregnancy, replace the white wine with stock, as the alcohol doesn't fully cook off; cook the mushrooms through well.
