Vegan courgette fritters with herb dip
Vegan courgette fritters with herb dip: crisp fritters made from courgette and gram flour, served with fresh soya yoghurt with parsley, chives and lemon.
Coarsely grate the courgettes, put them in a fresh tea towel and squeeze them out thoroughly. This makes the mixture more compact so it browns better later.
Finely chop the onion and garlic and mix them with the courgette, gram flour, paprika, salt and pepper. Leave the mixture to rest briefly so the flour can absorb moisture.
For the dip, stir the soya yoghurt with the lemon juice and the finely chopped chives and parsley. Season to taste with salt and pepper.
Shape the courgette mixture into small, flat fritters. If it seems very wet, press it together a little more firmly.
Heat the olive oil in a frying pan and fry the fritters over a medium heat until golden brown on both sides. Then drain them briefly on kitchen paper.
Serve the warm courgette fritters with the herb dip.
Good to know
When it needs to be quick but something fresh would be welcome, these fritters are just right. Golden brown outside, moist inside, with a cool dip full of herby flavour.
Swaps
Soya yoghurt → unsweetened coconut yoghurt (soya-free, usually a little milder in flavour); gram flour → oat flour (contains beta-glucans, slightly softer texture; contains gluten unless labelled gluten-free); parsley → dill (a different herb profile that goes well with lemon juice).
Allergens
Contains soya; chickpeas may not be suitable if you have a legume allergy. Well suited to children if mildly seasoned; in pregnancy, fine as long as the soya yoghurt is fresh and the fritters are cooked through well.
