Ingredients

Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the cucumber, apple, limes and mint thoroughly. Roughly chop the cucumber and apple and squeeze the limes.
  2. Core the apple and put it in the blender with the cucumber, lime juice and mint. If you like it colder, add a few ice cubes.
  3. Blend everything until the mixture is even. If you like the juice thinner, pour it through a fine sieve.
  4. Taste the juice and dilute it with a little water if needed. Then chill it briefly.
  5. Stir briefly once more in case anything has settled.

Good to know

A glass like this instantly feels like a break. Fresh, bright and pleasantly tart. Just right when you want something cool without much effort.

Swaps

Green apple → pear (a little milder, also provides fibre). Lime → lemon (similarly fresh, also provides vitamin C). Mint → lemon balm (mild aroma, also contains plant compounds). Cucumber → celery (more savoury, also brings some potassium; celery is an allergen).

Allergens

The recipe is naturally vegan and free from the most common allergens; for young children, offer it well diluted because of the acidity, and in pregnancy the ingredients are fine in normal kitchen amounts.
