Ingredients
150g desiccated coconut
1 unwaxed lemon
4 tbsp coconut milk
2 tbsp maple syrup
50g almonds
Method
You’ll need: grater
Wash the lemon thoroughly and finely grate the zest. Squeeze out a little juice if needed.
Mix the desiccated coconut with the coconut milk until you have a slightly moist mixture you can shape.
Stir in the maple syrup and lemon zest. If you like it a bit fresher, add a little lemon juice.
Chill the mixture briefly so it firms up. Then shape it into small balls and press an almond into the middle of each one.
Finally, roll the balls in desiccated coconut so they are nicely and evenly coated.
Serve the coconut and lemon balls well chilled.
