Vegan chickpea curry with air fryer cauliflower
Vegan chickpea curry with roasted cauliflower from the air fryer, coconut milk, tomatoes, ginger and garam masala, served with basmati rice. Dinner in 30 minutes, gluten-free.
Break the cauliflower into small florets and toss them with half the olive oil, the turmeric and half the salt. Cook in the air fryer at 200 °C for 15 minutes, shaking the basket after 7 minutes.
Meanwhile, cook the rice according to the packet instructions.
Finely dice the onion, garlic and ginger and soften them in the rest of the olive oil in a saucepan for 3 minutes. Stir in the curry powder and garam masala.
Add the tomatoes, coconut milk and rinsed chickpeas, simmer the curry for 10 minutes and season with the remaining salt.
Fold the cauliflower into the curry and serve with the rice and chopped coriander.
Good to know
In a curry, cauliflower often ends up soft and watery. From the air fryer it comes out roasted and keeps its bite. While it cooks, the sauce simmers, and the rice is ready at the same time.
Swaps
Chickpeas → red lentils (simmer them in the sauce for 10 minutes). Coconut milk → oat milk (contains gluten unless labelled gluten-free). Basmati rice → brown rice (cook for longer). Coriander → parsley.
Cooking tips
Cut the florets small so they roast through in 15 minutes. The curry tastes even more rounded the next day.
Storage
Keep the curry in the fridge for 3 days or in the freezer for 3 months; only add the cauliflower when you reheat it.
Allergens
Vegan and gluten-free, with no milk, egg or nuts. Coconut isn't one of the tree nuts on the allergen list.
