Ingredients
500 g sweet ripe cherries
2 tbsp coconut sugar
100 g rolled oats
50 g plain flour
70 g vegan butter (seed-oil-free)
3 tbsp coconut sugar
1 squeeze of lemon juice
1 tsp cinnamon
1 pot of cold plant-based vanilla sauce (without added sugar, or homemade)
Method
You’ll need: oven · baking dish · mixing bowl
Wash and stone the cherries and put them in a baking dish with the lemon juice, coconut sugar and cinnamon. Mix briefly.
Mix the oats, flour and coconut sugar in a bowl. Add the cold vegan butter and rub it in with your fingers to make coarse crumbs.
Scatter the oat topping loosely over the cherries. Don't press it down, so the surface turns nice and crunchy.
Bake the cherry crumble in the oven at 180 °C (160 °C fan) for 25–30 min, until the cherries are bubbling and the crumble is golden brown. Then leave it to rest briefly so the fruit juices settle.
If you like, finish the top with a little more cinnamon before serving. That makes the flavour rounder and warmer.
Serve warm with the cold plant-based vanilla sauce.
Good to know
This crumble is simple, warm and really comforting. The cherries turn soft and juicy, while the top goes golden brown and crunchy. Just right when you want something uncomplicated and good.
Swaps
Coconut sugar → date sugar (less processed) | Flour → spelt flour (a few more minerals) | Vegan butter → coconut oil (plant-based and seed-oil-free) | Plant-based vanilla sauce → unsweetened coconut yoghurt with vanilla (usually less sweet)
Allergens
Contains gluten (oats, flour) unless you use certified gluten-free oats and a gluten-free flour; depending on the vanilla sauce, soya or other allergens may be present. Good for children as long as the cherries are carefully stoned; during pregnancy it's fine, provided the ingredients are fresh and handled hygienically.
