Vegan chai chia pudding with persimmon and pumpkin seeds
Vegan chai chia pudding made with chia seeds and soya drink infused with black tea, cinnamon, cardamom and ginger, topped with persimmon and pumpkin seeds. A breakfast with 263 kcal per glass.
Heat the soya milk with the black tea, cinnamon, cardamom, ginger and cloves in a pan without letting it boil. Cover and leave to infuse for 5 minutes.
Strain the chai through a sieve and stir in the maple syrup. Leave it to cool for 10 minutes.
Stir in the chia seeds, wait 10 minutes and stir again. Cover the pudding and put it in the fridge for at least 4 hours or overnight.
Peel and dice the persimmon. Toast the pumpkin seeds in a dry frying pan for 2 minutes.
Divide the chia pudding between two glasses, top with the persimmon and pumpkin seeds and serve.
Good to know
Black tea and chai spices give this chia pudding the flavour of a chai latte. On top goes persimmon, which is in season in autumn and tastes as sweet as honey.
Swaps
Persimmon → pear or mango. Soya milk → oat milk (contains little protein, and gluten unless labelled gluten-free). Black tea → rooibos (caffeine-free). Maple syrup → 2 dates, blended in.
Cooking tips
Stirring a second time after 10 minutes stops the chia seeds from forming lumps. A persimmon is ready to eat when it's as soft as a tomato; unripe, it tastes furry.
Storage
Keeps for 3 days in the fridge without the topping.
Allergens
Contains soya; no gluten, milk, egg or nuts. Black tea contains caffeine (in pregnancy, no more than 200 mg a day from all sources combined); made with rooibos, the pudding is also suitable for children.
