Ingredients

Method

You’ll need: high-speed blender · chopping board · knife · sieve

  1. Wash the celery thoroughly, remove any wilted bits and cut the stalks into rough pieces. Briefly rinse the lemon.
  2. Put the celery into a high-speed blender with the lemon juice. Blend everything finely until it's as smooth as possible.
  3. If you'd like a smoother, thinner juice, press the mixture through a fine sieve or a nut milk bag. This makes the texture finer and more liquid.
  4. Taste the juice briefly and round it off with another small squeeze of lemon if needed. Drink it straight after blending so the flavour and freshness are kept.
  5. Pour into a glass and serve straight away.

Good to know

Sometimes something simple is just right. This celery juice is crisp, fresh and pleasantly no-frills in the glass.

Swaps

Celery → cucumber (milder, very watery) Celery → fennel (fresh flavour, provides fibre) Lemon → lime (similarly fresh, a little more aromatic, provides vitamin C) Lemon → green apple (milder acidity, a little more sweetness and extra polyphenols)

Allergens

Celery is one of the allergens that must be declared; avoid it if you have a celery allergy. For children, offer it only mild and in small amounts; in pregnancy, the usual kitchen amounts of celery and lemon are generally fine.

Frequently asked questions

Which vitamins are in celery and lemon?

Celery mainly provides vitamin K and smaller amounts of folate. Lemon is best known for vitamin C.

Does celery juice contain minerals?

Celery naturally contains potassium and some sodium. The amounts are there, but not exceptionally high per glass.

What should sensitive people know about celery?

Celery can cause bloating or irritation in sensitive people and is also a well-known allergen. If raw veg doesn't agree with you, start with small amounts.

Can the lemon juice be a problem?

The lemon's acidity makes the juice fresher, but it can be unpleasant with a sensitive stomach, reflux or an irritated mouth. In that case, a very small squeeze is often enough.

Does celery juice keep its fibre?

That depends on whether you strain it. Without straining, more plant fibre stays in the glass; straining makes the texture finer but leaves less fibre.
