Wash the celery, cucumber and parsley thoroughly. Cut the celery and cucumber into large pieces.
Core the apple and chop it. Peel the ginger and squeeze the lime.
Pick the parsley leaves off the tough stalks. Put the celery, cucumber, apple, ginger and parsley in the blender.
Add the lime juice and water and blend everything until the smoothie is even and creamy.
If it's too thick for you, add a little more water and blend briefly again. If you like it smoother, pour it through a sieve.
Serve the smoothie in glasses, ideally well chilled.
Good to know
A green smoothie like this can taste surprisingly clear and fresh. It's uncomplicated, crisp and just right when you fancy something light.
Swaps
Apple → pear (similarly mild, a little softer in flavour); parsley → coriander (also provides green plant compounds); lime → lemon (similarly fresh, with vitamin C); water → unsweetened coconut water (a subtle natural sweetness)
Allergens
Celery is one of the allergens that must be declared; for children use only a little ginger, and during pregnancy the ingredients are usually fine in normal kitchen amounts – if you have a celery allergy, please avoid this smoothie.
