Ingredients
1 head of cauliflower
100 g rice flour
150 ml water
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
1 pinch of salt
1 pinch of pepper
100 ml BBQ sauce (without added sugar or seed oils)
Method
You’ll need: oven · baking tray · sieve
Preheat the oven to 220 °C (200 °C fan) and line a baking tray with baking paper. Wash the cauliflower and break it into small florets.
Whisk the rice flour with the water, paprika, garlic powder, salt and pepper into a smooth, thick batter. It should coat the florets well.
Dip the cauliflower florets in the batter, let the excess drip off briefly and spread them out on the tray. Drizzle with olive oil and bake at 220 °C for 20–25 min until the coating is golden brown, turning once.
Take the baked florets out of the oven and carefully toss them with the BBQ sauce. Then put them back on the tray.
Roast at 220 °C for another 5–8 min until the glaze is warm, clings to the florets and caramelises slightly. That way the surface stays full of flavour and gains a little more depth.
Serve hot, ideally straight from the oven. A fresh dip or a crunchy salad goes well with them.
Good to know
Crispy outside, tender inside, with that sticky BBQ coating that instantly feels like finger food. An oven dish that's uncomplicated and great fun.
Swaps
Rice flour → gram flour (also provides protein and fibre). BBQ sauce → tomato purée with date purée and spices (less processed). Olive oil → avocado oil (heat-stable and mild). Cauliflower → broccoli (also provides vitamin K and protein).
Allergens
The recipe is naturally vegan and usually gluten-free if you choose a suitable BBQ sauce. Season mildly for children; in pregnancy it's fine with fresh, well-cooked ingredients.
