Preheat the oven to 220 °C (200 °C fan) and break the cauliflower into florets. Toss with olive oil, garam masala, turmeric, salt and pepper and roast for 20–25 min until golden brown.
Meanwhile, finely chop the onion, garlic and ginger. Soften in olive oil until translucent, then toast the garam masala and paprika briefly until fragrant.
Add the passata, coconut milk and cashews to the pan. Simmer everything gently for a few minutes so the cashews soften and the sauce thickens.
Blend the sauce until smooth and season to taste with salt. At the same time, cook the rice according to the packet instructions.
Add the roasted cauliflower to the sauce and leave it briefly so everything comes together.
Serve on the rice with fresh coriander.
Good to know
This dish is warm, creamy and pleasantly spiced without feeling heavy. The roasted cauliflower gives the sauce depth and turns little effort into a really well-rounded meal.
Swaps
Cashews → almond butter (contains unsaturated fats and vitamin E). Coconut milk → unsweetened oat cooking cream (still a creamy texture; contains gluten unless certified gluten-free). Rice → brown rice (more fibre and minerals). Cauliflower → chickpeas (more plant protein and fibre).
Allergens
Contains tree nuts from the cashews; for children, milder seasoning works well, and during pregnancy the dish is fine with fresh, well-washed ingredients and fully cooked components.
