Ingredients
200g wholewheat macaroni
300g cauliflower
3 tbsp cashew butter
3 tbsp nutritional yeast
1 tbsp olive oil
1 tsp mustard
1 pinch of nutmeg
Method
You’ll need: saucepan · blender · sieve
Cook the wholewheat macaroni in salted water until al dente, drain and set aside for a moment.
Divide the cauliflower into florets and cook until soft enough to mash easily with a fork.
Put the hot cauliflower in a blender with a little cooking water and add the cashew butter, nutritional yeast, mustard and olive oil.
Blend everything into a smooth sauce and season to taste with nutmeg. If needed, add a little more cooking water until the texture is nice and creamy.
Mix the sauce thoroughly with the cooked wholewheat macaroni in the pan so everything is evenly coated.
Serve the vegan cauliflower mac and cheese warm straight away. For families at the table, a little freshly ground pepper works really well with it.
Good to know
When you want something creamy and uncomplicated, this dish is spot on. The sauce turns out amazingly smooth and mild – and needs no classic cheese sauce at all.
Swaps
Cashew butter → white almond butter (similarly creamy, a little more vitamin E). Wholewheat macaroni → chickpea pasta (usually more protein and fibre). Olive oil → avocado oil (mild in flavour, contains monounsaturated fatty acids). Cauliflower → steamed broccoli (also adds vitamin K and a few more green plant compounds).
Allergens
Contains tree nuts from the cashew butter and, depending on the nutritional yeast, may contain traces of other allergens; usually well suited to children if mildly seasoned, and generally fine during pregnancy as long as all the ingredients are fresh and handled hygienically. Contains: gluten, mustard.
