Vegan cauliflower curry soup
Vegan cauliflower curry soup with coconut milk, garlic and turmeric: creamy, spiced and easy for every day. A simple recipe for a warm, satisfying vegetable soup.
Preheat the oven to 220 °C (200 °C fan). Wash the cauliflower, break it into small florets and spread them out on a baking tray with olive oil.
Roast the cauliflower at 220 °C for 15–20 min until the tips are golden brown. This gives the soup more roasted flavour and a fuller taste.
Finely dice the onion and garlic and soften in olive oil in a large pan until translucent. Toast the curry powder and turmeric briefly until fragrant.
Add the roasted cauliflower to the pan and pour in the coconut milk and vegetable stock. Bring everything to the boil and simmer briefly.
Blend the soup until smooth with a stick blender and season to taste with salt and pepper. If needed, make it creamier with a little stock.
Ladle into bowls and serve with a drizzle of olive oil. Toasted pumpkin seeds go well with it.
Good to know
This soup is simple, creamy and pleasantly spiced. The roasted cauliflower gives it depth without making it heavy. Just right when you want something warm and simple.
Swaps
Coconut milk → cashew butter plus water (usually a little more protein, depending on the product); cauliflower → broccoli (also provides fibre and vitamin C); curry powder → garam masala (similarly spiced, often a little more aromatic); pumpkin seeds → toasted almonds (contain unsaturated fats and some vitamin E)
Allergens
The soup is vegan; coconut may be relevant depending on how it's classified, and pumpkin seeds aren't ideal for some people either. For children, keep the seasoning milder; during pregnancy it's fine with fresh, well-heated ingredients.
