Vegan Caribbean coconut rice with black beans
Vegan Caribbean coconut rice with black beans: creamy basmati rice with coconut milk, lime, mango, coriander and black beans – fresh, filling and full of flavour.
Finely dice the red onion, cut the mango into small pieces, and zest and juice the lime. Roughly chop the coriander, stalks and all, and rinse the black beans very well.
Gently heat the coconut oil in a wide pan and briefly sweat the red onion with the coriander stalks. Add the basmati rice and stir briefly until it looks slightly glossy.
Pour in the coconut milk and a little water, season with sea salt and leave everything to simmer gently. Cook the rice until soft and creamy.
Fold in the black beans and warm them through briefly. Stir in the lime zest and a little lime juice and season with sea salt.
Carefully fold in the mango and chopped coriander, or scatter them fresh on top. This keeps the dish juicy and gives it a fresh contrast.
Serve hot and finish with a little extra lime and coriander if you like.
Good to know
This dish tastes of sunshine and a relaxed evening, without much effort. Creamy, fresh and with just the right balance of gentle sweetness and lime. So easy it fits even on busy days.
The recipe is vegan and contains none of the most common allergens such as milk, egg and gluten. Coconut isn't one of the main allergens in the EU but can disagree with some people; for children and during pregnancy the dish is generally well suited when the ingredients are fresh and well washed.
