Ingredients

Method

You’ll need: oven · frying pan · saucepan · baking tray · chopping board · knife · mixing bowl

  1. Preheat the oven to 200 °C (180 °C fan) and halve the Hokkaido squash. Scoop out the seeds and cut it into wedges.
  2. Put the squash on a baking tray, drizzle with olive oil, salt lightly and bake at 200 °C for 20–25 min until soft and lightly browned at the edges.
  3. Cook the buckwheat according to the packet instructions, then leave it to cool a little so the salad stays balanced.
  4. Wash the lamb's lettuce thoroughly and spin it dry. Toast the pumpkin seeds in a frying pan without any extra fat until fragrant.
  5. Arrange the buckwheat, lamb's lettuce and roasted squash on plates or in a large bowl. Scatter the pumpkin seeds over the top.
  6. Serve the salad with the rest of the olive oil drizzled over as a finish. It tastes especially well rounded when lukewarm.

Good to know

This salad is simple and really good. Warm roasted squash meets fresh, slightly bitter notes and a pleasant nuttiness. Just right when you want something filling that still feels light.

Swaps

Buckwheat → quinoa (a little more protein) | lamb's lettuce → rocket (stronger flavour, similarly fresh) | pumpkin seeds → walnuts (more omega-3 fatty acids) | olive oil → avocado oil (mild flavour, with lots of monounsaturated fats)

Allergens

The recipe is gluten-free as long as the buckwheat hasn't been contaminated with cereals containing gluten; pumpkin seeds may not agree with some sensitive people. Well suited to children in small, soft portions, and in pregnancy all ingredients are fine with good kitchen hygiene.
