Vegan broccoli sprout salad with black radish, pumpkin seeds, Styrian pumpkin oil, cider vinegar and Dijon mustard – spicy, fresh and crunchy.
You’ll need: chopping board · knife · mixing bowl
This salad is clear, spicy and pleasantly bitter. It feels light but still has depth and bite. Just right when you want something fresh with character.
Pumpkin oil → extra virgin olive oil (more monounsaturated fatty acids, easy for everyday cooking and more stable against oxidation) Dijon mustard → freshly grated horseradish (simpler ingredient list, strong heat, goes well with radish and sprouts) Styrian pumpkin seed butter/paste → avocado (more fibre, creamy texture, provides potassium) Black radish → radishes or daikon (milder, still crunchy and fresh)
The recipe contains mustard as an allergen. Black radish and mustard often taste too sharp for children, and during pregnancy raw sprouts are best avoided – only eat them thoroughly heated.
Broccoli sprouts contain vitamin C, vitamin K and glucosinolates as plant compounds. They also give the sprouts their slightly sharp, mustardy note.
Pumpkin seeds bring magnesium, zinc, iron, fibre and some protein. They also contain unsaturated fatty acids, which are found in pumpkin oil too.
It varies from person to person. Raw black radish can be quite sharp and intense, especially for sensitive stomachs or if brassicas don't agree with you.
It mainly provides unsaturated fatty acids and, thanks to the seeds, has a very distinctive, nutty flavour. The darker and stronger the oil, the more it shapes the taste of the salad.
Not necessarily. Cider vinegar is acidic and can be unpleasant with a sensitive stomach, reflux or an irritated mouth, even though small amounts usually blend in well.
