Ingredients
1 handful of wild blueberries
50ml unsweetened almond milk
200ml creamy full-fat coconut milk (tinned)
4 tbsp organic black chia seeds
1 tsp Ceylon cinnamon
1 pinch of vanilla seeds
Method
You’ll need: mixing bowl · sieve
Briefly wash the wild blueberries and drain well. Get the chia seeds, coconut milk, almond milk, Ceylon cinnamon and vanilla seeds ready.
Stir the coconut milk and almond milk together in a bowl until smooth. Stir in the chia seeds, Ceylon cinnamon and vanilla seeds until there are no more lumps.
Leave the mixture to stand for a few minutes, then stir thoroughly again. This helps the chia seeds swell evenly and makes the pudding creamy.
Fold in the wild blueberries, or lightly crush them and stir them in if you like a fruitier colour and more juice in the pudding.
Cover the chia pudding and chill until it has thickened noticeably. Stir once more before serving and loosen with a little almond milk if needed.
Spoon into glasses or bowls and serve well chilled. A few wild blueberries on top make the texture even nicer.
Good to know
A pudding like this feels quietly luxurious. Creamy, cool and satisfying. Especially good when mornings need to be simple.
Swaps
Almond milk → unsweetened cashew milk (often a little creamier, also unsweetened). Coconut milk → unsweetened coconut yoghurt (lighter texture, a little less fat). Blueberries → raspberries (more fibre per serving). Chia seeds → ground linseed (also fibre and plant-based omega-3 fatty acids).
Allergens
Contains tree nuts (almond milk). For children, serve with a texture that suits them. Chia seeds are usually fine during pregnancy in normal kitchen amounts; if in doubt, ask your doctor.
