Preheat the oven to 220 °C (200 °C fan). Cut the sweet potatoes into wedges, toss with olive oil, salt and smoked paprika and bake in the oven for 20–25 min until golden brown.
Roughly mash the black beans in a bowl. Mix in the onion, garlic, oats, cumin, smoked paprika, salt and pepper.
Shape the mixture into patties. If it seems too soft, work in a few more oats and leave it to rest for a moment.
Heat olive oil in a frying pan and fry the patties over a medium heat on both sides until crisp and well browned on the outside.
Toast the burger buns briefly. Top with rocket, a bean patty and ketchup.
Serve the burgers with the sweet potato wedges.
Good to know
When you want something savoury and uncomplicated, this recipe is just right. Crisp outside, juicy inside, with something fresh on the plate too.
Swaps
Black beans → kidney beans (plenty of fibre too, plus protein); oats → spelt flakes (a bit more variety in your grains); ketchup → tomato purée with a splash of balsamic vinegar (usually less sweet); rocket → lamb's lettuce (milder flavour, also with folate and vitamin K).
Allergens
Contains gluten (oats, unless labelled gluten-free, and the burger buns). For children, season mildly and cook the patties through well; in pregnancy it's generally fine, as long as the rocket is washed and everything is prepared hygienically.
