Ingredients
400g mixed berries
100g rolled oats
50g flaked almonds
2 tbsp coconut oil
2 tbsp maple syrup
1 tbsp lemon juice
1 tsp cinnamon
1 pinch of salt
Method
You’ll need: oven · baking dish · mixing bowl
Preheat the oven to 180 °C (160 °C fan). Put the berries in an ovenproof dish and mix with the lemon juice.
Mix the rolled oats, flaked almonds, cinnamon and salt in a bowl.
Add the coconut oil and maple syrup and rub everything together with your hands or a spoon into loose crumbs.
Spread the crumble evenly over the berries so the top is well covered.
Bake the crumble at 180 °C for 20–25 min, until the topping is golden brown and the berries are visibly bubbling at the edges.
Serve lukewarm, plain or with plant yoghurt.
Good to know
A crumble like this is just right when you want something warm, fruity and easy. As a dessert or a sweet breakfast – it always works.
Swaps
Almonds → walnuts (more omega-3 fatty acids); maple syrup → date paste (more natural sweetness plus fibre); coconut oil → extra virgin olive oil (more monounsaturated fatty acids); berries → plums or apples (also contain fibre, depending on the season).
Allergens
Contains tree nuts (almonds). Oats contain gluten unless they're certified gluten-free. Well suited to children once the berries are baked soft, and unremarkable during pregnancy with fresh, well-washed ingredients. Contains: gluten (oats).
