Ingredients
100g rolled oats
250ml unsweetened almond milk
1 small apple
1 tbsp linseed
1 tbsp lemon juice
100g frozen mixed berries
Method
You’ll need: mixing bowl · grater
Finely grate the apple and mix it with the lemon juice straight away so it stays pale and fresh.
Stir the oats and freshly ground linseed into the grated apple in a bowl.
Add the almond milk and mix thoroughly until evenly combined.
Cover and leave to soak in the fridge for several hours or overnight.
Let the mixed berries thaw separately in the fridge so they release their juice and stay cold.
Before serving, give the Bircher muesli another stir, divide between bowls and top with the mixed berries.
Good to know
A breakfast like this makes mornings quieter and nicer. It's ready and waiting, fresh and creamy, and tastes like everyday life with a little less rush.
Swaps
Almond milk → unsweetened soya milk (usually more protein). Mixed berries → blueberries (mild and full of anthocyanins). Apple → pear (often a little milder). Linseed → chia seeds (also with fibre).
Allergens
Contains tree nuts (almonds) from the almond milk. Oats are usually fine for children; with coeliac disease, only use certified gluten-free oats. For pregnant women, children and older people, boil frozen berries for 2 minutes first and let them cool. Contains: tree nuts.
