Ingredients

Method

You’ll need: stick blender · chopping board · knife

  1. Halve the avocado, remove the stone and scoop out the flesh.
  2. Peel the banana and break it into rough pieces. It's fine if it already has brown spots.
  3. Put the avocado, banana, cocoa powder and a splash of almond milk into a tall container.
  4. Blend everything with a stick blender for a good while, until no pieces of avocado are left.
  5. Spoon the pudding into small glasses and chill for 10 min.

Good to know

You won't taste the avocado in this dessert. It simply adds plenty of unsaturated fat and a texture like real cream pudding.

Swaps

Banana → frozen raspberries (changes the colour a lot, but a great option if you're watching your carbs).

Cooking tips

Only use a dark, soft banana. If it's still greenish, it has too little sweetness of its own and a lot of starch.

Storage

Because of the avocado, the pudding oxidises quickly. If you keep some, press cling film directly onto the surface so no air gets in.

Allergens

Contains tree nuts (almonds in the almond milk). Lactose-free, gluten-free and vegan.
