Ingredients
150g pudding rice
400ml unsweetened almond milk
200ml coconut milk
2 tbsp maple syrup
200g wild blueberries
1 tsp Ceylon cinnamon
Method
You’ll need: oven · baking dish
Preheat the oven to 180 °C (160 °C fan) and put the pudding rice, almond milk, coconut milk and maple syrup in a shallow baking dish. Stir everything well so the syrup is evenly mixed in.
Wash the blueberries and carefully fold them into the rice. This way many of the berries stay whole and only slowly release their juice as they bake.
Sprinkle the Ceylon cinnamon evenly over the top. Put the dish in the oven and bake the rice pudding at 180 °C for 40–45 min, until the rice is soft and the top is lightly golden.
Check the texture towards the end and stir gently once if needed. If the rice pudding seems too firm, a small splash of almond milk helps.
Take the dish out of the oven and let the rice pudding rest for a moment. It thickens a little more and turns creamier.
To serve, spoon it warm into bowls. Top with a few fresh blueberries if you like.
Good to know
Baked rice pudding is pure comfort. You put everything in the oven and end up with a warm, creamy bowl with soft berries and a gentle hint of cinnamon.
Swaps
Almond milk → unsweetened oat milk (usually a little more fibre; contains gluten unless certified gluten-free) | coconut milk → full-fat coconut milk (richer and creamier thanks to the higher fat content) | maple syrup → date paste (also adds a little fibre) | blueberries → raspberries (more fibre, slightly tarter)
Allergens
Contains tree nuts (almond milk). Usually suitable for children if not served too sweet, and fine during pregnancy as long as all ingredients are fresh and handled hygienically.
