Ingredients
1 avocado
40 g dark chocolate (sweetened with dates, vegan)
50 ml almond milk
1 tbsp raw cocoa powder
Method
You’ll need: blender · chopping board · knife
Halve the avocado, remove the stone and scoop out the flesh with a spoon.
Melt the dark chocolate gently and let it cool briefly so the cream stays smooth later.
Put the avocado, raw cocoa powder, dark chocolate and almond milk in a blender. Blend everything to a fine, even mousse.
Check the consistency and add a little more almond milk if needed. Blend briefly again until the cream looks soft and airy.
Chill the mousse so it firms up a little and the chocolate flavour tastes more rounded.
Spoon the avocado chocolate mousse into small bowls and serve well chilled.
Good to know
When it needs to be quick but should still look like dessert, this mousse is spot on. Creamy, chocolatey and pleasantly simple.
Swaps
Almond milk → coconut milk (usually creamier, often a little more fat) | Dark chocolate → cacao nibs plus a little date paste (less processed, more fibre) | Raw cocoa powder → regular unsweetened cocoa powder (similar flavour, often milder) | Avocado → silken tofu (more protein, but less fibre)
Allergens
Contains chocolate and tree nuts (almond milk). For children, only in small portions because of the strong cocoa flavour; during pregnancy it's no concern with pasteurised plant milk and regular dark chocolate. Contains: tree nuts.
