Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve · grater

  1. Briefly cook or thaw the edamame according to the packet instructions and drain well. Wash the red cabbage, carrot and spring onion.
  2. Finely shred or slice the red cabbage. Coarsely grate the carrot and cut the spring onion into thin rings.
  3. For the dressing, stir the peanut butter, tamari, lime juice and freshly grated ginger until smooth. If needed, loosen with a little water to make it creamier.
  4. Put the edamame, red cabbage, carrot and spring onion into a large bowl. Pour over the dressing and mix everything thoroughly.
  5. Leave the salad to stand briefly so the red cabbage and dressing come together. Toss lightly once more before serving.
  6. Divide between bowls and serve straight away. A warm rice dish or fried tofu goes well with it.

Good to know

A salad like this is little effort and still tastes really well rounded. Crunchy, creamy and fresh all at once. Exactly my kind of thing on warm days.

Swaps

Peanut butter → almond butter (more vitamin E) | Edamame → chickpeas (more fibre) | Lime juice → lemon juice (similar acidity, some vitamin C) | Spring onion → fresh coriander (more aroma, some vitamin K)

Allergens

Contains soya and peanuts; even gluten-free tamari may contain traces, depending on the product. Suitable for children if finely cut and mildly seasoned. During pregnancy it's generally fine with fresh, well-washed ingredients.
