Ingredients
400 g artichoke hearts
250 g beans
2 tbsp olive oil
2 garlic cloves
10 ml lemon juice
1 pinch of salt
Method
You’ll need: frying pan · sieve · wooden spoon
Drain the artichoke hearts and beans well. Crush the garlic and get everything ready.
Heat the olive oil in a frying pan. Fry the garlic briefly until fragrant, but don't let it turn dark.
Add the artichoke hearts and fry them for a few minutes. This gives them some colour and more roasted flavour.
Add the beans and let everything braise briefly over a low heat. Stir now and then so the flavours come together.
Season the dish with the lemon juice and salt. If you like, leave it to stand for a moment.
Serve the vegan artichokes with beans warm. A piece of toasted sourdough bread or some millet goes well with it.
Good to know
I especially like a dish like this on long days. Little effort, lots of flavour, and in the end there's something warm on the table that feels pleasantly light.
Swaps
Beans → chickpeas (similar fibre content, a little nuttier) | Artichoke hearts → fennel (also provides fibre and a fresh flavour) | Olive oil → avocado oil (stable at high heat, with monounsaturated fats) | Lemon juice → lime juice (similar acidity, a slightly different flavour)
Allergens
The dish is naturally vegan and free from gluten, milk and egg, as long as the beans you use are plain; garlic can be strong for sensitive children or people with a sensitive stomach, and the dish is usually fine during pregnancy.
