Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve · grater

  1. Drain the artichoke hearts and quarter them. Finely slice the daikon radish, wash the rocket thoroughly and spin it dry.
  2. Cut the chicory or dandelion into thin strips or grate it. That way the bitter note spreads evenly through the salad later.
  3. Whisk the olive oil with the cloudy apple cider vinegar and lemon juice. Season with salt until the dressing tastes fresh and balanced.
  4. Toss the rocket, daikon radish and artichoke hearts loosely in a large bowl. Fold in the chicory or dandelion.
  5. Pour the dressing over the salad and toss briefly. Don't mix for too long, so the rocket and radish stay crisp.
  6. Serve straight away. A little freshly ground pepper goes well with it if you want to deepen the bitter notes.

Good to know

This salad tastes clear, bitter-sweet and really fresh. The bitter note makes it interesting without feeling heavy. Just right when you want something crunchy with character.

Swaps

Rocket → lamb's lettuce (milder, similar nutrients) Daikon radish → kohlrabi (crunchy, milder in flavour and versatile) Dandelion/chicory → radicchio (pleasantly bitter, keeps the bitter note) Artichoke hearts → fennel (fresh, aromatic)

Allergens

The recipe is naturally free from the most common allergens, but cider vinegar and radish can taste sharp or irritate a sensitive stomach. Go easy on the amounts for children, and during pregnancy it's important to wash raw ingredients well.

Frequently asked questions

What's in artichokes nutritionally?

Artichokes provide fibre, some potassium and folate, and plant compounds such as polyphenols. Their bitter compounds give the salad its typical tart note.

Does raw daikon agree with everyone?

Daikon is usually milder than small red radishes, but it also contains mustard oil glycosides. Sensitive people sometimes react with stomach irritation or burping, especially when it's raw.

What do rocket, chicory or dandelion bring to the salad?

They provide vitamin K, folate and various bitter compounds and polyphenols. Dandelion adds a particularly bitter, spicy note.

Why does olive oil go so well with this salad nutritionally?

Olive oil mainly provides monounsaturated fatty acids, especially oleic acid, plus smaller amounts of vitamin E and polyphenols. It goes well with the fat-soluble plant compounds in the salad, both in flavour and in terms of nutrients.

Does cider vinegar agree with everyone?

Not necessarily. The acidity can be unpleasant with a sensitive stomach, reflux or an irritated mouth, even though small amounts of cider vinegar suit many people.
