Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve

  1. Put the beluga lentils in a sieve, rinse briefly and drain well. Drain the artichoke hearts too and chop them roughly.
  2. Wash and trim the radishes and slice or shave them thinly. Finely chop the parsley.
  3. For the dressing, stir the lemon juice, olive oil, wholegrain mustard, sea salt and pepper together in a small bowl until well combined.
  4. Gently mix the lentils, artichoke hearts, radishes and parsley in a large bowl. Pour over the dressing and carefully fold it in.
  5. Leave the salad to stand briefly so the flavours come together. Taste again before serving.
  6. Serve in bowls, ideally slightly chilled. If you like, finish with a little extra parsley and black pepper.

Good to know

A salad like this hits the spot without being heavy. Fresh, crisp and pleasantly satisfying. I especially like it when I want something simple that still has substance.

Swaps

Beluga lentils → green lentils (similar fibre and protein content); radishes → fennel (milder, also provides fibre); parsley → coriander (fresh herbs with plant compounds); mustard → Dijon mustard without sugar in the ingredients (spicy, usually a little more delicate in the dressing).

Allergens

Mustard is an allergen that must be declared; for children, mild seasoning and finely sliced radishes work well, and during pregnancy well-washed herbs and properly processed, pasteurised jarred products are important.

Frequently asked questions

Which nutrients do beluga lentils provide in particular?

Beluga lentils mainly contain fibre, plant protein, folate, iron, magnesium and potassium. The dark skin also provides polyphenols.

What's in artichokes nutritionally?

Artichokes contain fibre, some folate, potassium and various bitter compounds such as cynarin, which gives them their typical slightly bitter taste.

Why do lemon and parsley go well with lentils nutritionally?

Lemon and parsley provide vitamin C, and they bring freshness to the earthy lentils.

Do radishes always agree with a sensitive digestion?

Not necessarily. Radishes contain mustard oils and pungent compounds that some people tolerate well and others find irritating, especially raw and in larger amounts.

Is olive oil just flavour here, or nutritionally useful too?

Both. Olive oil mainly provides monounsaturated fats and polyphenols, in varying amounts depending on quality and processing.
