Ingredients
80g dried apple rings (unsulphured)
4 soft Medjool dates (stoned)
60g walnuts
1 pinch of cinnamon
Method
You’ll need: blender · mini chopper · sieve
Check the dried apple rings and, if needed, soak them briefly in warm water to soften. Then drain well.
Put the apple rings and Medjool dates into a blender or mini chopper and blitz to a sticky paste.
Add the walnuts and cinnamon and pulse only briefly, so the mixture keeps a little texture.
Shape the mixture into small bites with your hands. If it's too soft, chill it for a short while.
Leave the shaped bites to rest in the fridge until they're a little firmer.
Serve chilled and dust with a little extra cinnamon if you like.
Good to know
These little bites are quick to make and refreshingly simple. They taste fruity, soft and slightly nutty – just right when you're a bit peckish between meals.
Swaps
Walnuts → almonds (more vitamin E); Medjool dates → soft dried figs (more fibre); dried apple rings → dried pear (similarly fruity, a little milder); cinnamon → vanilla (milder aroma, without the warmth).
Allergens
Contains walnuts (tree nuts), so not suitable for people with a nut allergy. Because of the sticky texture and the nuts, only give to small children with care. During pregnancy it's unremarkable as part of a normal diet, with fresh, properly stored ingredients.
