Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. Wash the apple, core it and grate it finely or cut it into small dice.
  2. Mix the oats, ground linseed and Ceylon cinnamon in a bowl or straight in the jar.
  3. Add the soya milk and apple and stir everything thoroughly until the mixture is evenly moist.
  4. Cover the mixture and leave it to swell in the fridge for several hours or overnight.
  5. Stir again before eating. If the overnight oats have become too firm, stir in a little soya milk.
  6. Serve cold or let them come up to room temperature briefly.

Good to know

When you want the morning to start quietly, this jar is a good answer. A quick stir in the evening, pleasantly creamy and familiar in the morning.

Swaps

Soya milk → unsweetened almond milk (milder in flavour and usually a little thinner; contains tree nuts) | Linseed → chia seeds (thicken more and add more fibre) | Apple → pear (similarly juicy, often a little milder) | Ceylon cinnamon → vanilla and a little cardamom (a different flavour, no coumarin to think about)

Allergens

Contains soya and gluten (oats contain gluten unless certified gluten-free); good for many children if the texture suits them, and in pregnancy the ingredients are fine in normal kitchen quantities. Contains: gluten (oats).
