Ingredients
50g puffed amaranth
50g vegan protein powder
3 tbsp peanut butter
3 tbsp maple syrup
2 tbsp plant milk
Method
You’ll need: chopping board · knife · mixing bowl
Stir the peanut butter, maple syrup and plant milk together in a large bowl to make a paste.
Quickly mix in the protein powder until you have a thick mixture.
Carefully knead the puffed amaranth into the mixture with your hands.
Press the mixture firmly into a small square tin.
Leave it to firm up in the fridge, then cut it into six bars.
Good to know
Pricey shop-bought snack bars are a thing of the past. You can knead your own protein bars from a puffed pseudo-grain.
Swaps
Amaranth → puffed quinoa (similar nutritional values). Peanut butter → almond butter (if you have a peanut allergy). Maple syrup → date paste (binds in a similar way and brings some fibre).
Cooking tips
Lightly wet your hands before pressing the mixture into the tin, so nothing sticks to your fingers.
Storage
Kept chilled in a container, the bars last a week without any trouble.
