40g dark chocolate (sweetened with dates)
1 pinch of salt
Method
You’ll need: chopping board · knife
Warm the peanut butter and maple syrup over a low heat until smooth and well combined.
Stir in the popped amaranth and salt until evenly mixed.
Press the mixture into a tin lined with baking paper and spread it as evenly as possible.

Cut the block into bars and serve chilled or briefly brought to room temperature.
Good to know
These bars are quick to make and pleasantly simple. Delicately chocolatey on the outside, crunchy and nutty inside. A snack that works really well without much effort.
Swaps
Peanut butter → almond butter (more vitamin E) | maple syrup → date paste (extra fibre) | dark chocolate → chocolate with 100% cocoa (unsweetened, much more bitter) | popped amaranth → puffed quinoa (similarly light, with plant protein)
Allergens
Contains peanuts and, depending on the chocolate, may contain traces of milk, tree nuts or soya. For children, suitable in small, easy-to-chew pieces; during pregnancy, nothing to watch out for in normal kitchen amounts, as long as all ingredients agree with you.
