Method

You’ll need: frying pan · saucepan · wooden spoon

  1. Slit the vanilla pod lengthways and scrape out the seeds. Bring the almond milk, vanilla seeds, vanilla pod, cinnamon stick and salt to the boil in a pan.
  2. Stir in the pudding rice and leave it to swell, covered, over a low heat for 30 minutes. Stir every 5 minutes so nothing catches.
  3. Remove the vanilla pod and cinnamon stick and stir in two thirds of the maple syrup.
  4. Heat the sour cherries with the juice of the orange and the remaining maple syrup. Mix the cornflour with a splash of water, stir it in and simmer everything for 1 minute.
  5. Toast the flaked almonds in a dry frying pan for 2 minutes.
  6. Divide the rice pudding between four bowls and top with the warm cherries and almonds.

Good to know

In Denmark, Christmas dinner ends with risalamande, rice pudding with almonds and warm cherry sauce. This version cooks in almond milk and comes to the breakfast table. On Boxing Day, it also tastes good cold from the fridge.

Swaps

Almond milk → oat milk (creamier, not gluten-free). Maple syrup → date paste. Sour cherries → stewed plums. Flaked almonds → chopped pistachios.

Cooking tips

Rice pudding catches easily; a heavy-based pan and a low heat help. If it gets too firm as it cools, stir in a splash of almond milk. There's no need to thaw frozen sour cherries.

Storage

The rice pudding keeps for 3 days and the cherries for 4 days in the fridge; eat cold or warm up with a little almond milk.

Allergens

Vegan and gluten-free, contains almonds. Suitable for children and during pregnancy.
