Ingredients
400g tofu
1 tbsp cornflour
400g Hokkaido squash
1 tbsp olive oil
1 piece of ginger
2 tbsp tahini
1 unwaxed lime
4 tbsp water
2 spring onions
1 pinch of salt
1 tsp sesame seeds
1 tsp maple syrup
2 tbsp soy sauce
Method
You’ll need: air fryer · frying pan · chopping board · knife · grater
Press the tofu dry with kitchen paper and cut it into 2 cm cubes. Toss it with half the soy sauce and dust with cornflour.
Scoop the seeds out of the Hokkaido squash, cut it skin on into 2 cm cubes and toss with the olive oil and salt.
Cook the squash and tofu side by side in the air fryer at 200 °C for 16 to 18 minutes, shaking the basket every 5 minutes.
Grate the ginger and stir it with the tahini, the rest of the soy sauce, the lime juice, maple syrup and water into a creamy sauce.
Toast the sesame seeds in a dry frying pan for 1 minute and slice the spring onions into rings. Serve the tofu and squash with the sauce and scatter over the sesame seeds and spring onions.
Good to know
Tofu turns crisp outside in the air fryer if you press it well and dust it with starch. The Hokkaido squash cooks alongside in the same basket, and you don't need to peel it. You stir the sesame ginger sauce together cold.
