Method

You’ll need: air fryer · chopping board · knife · grater

  1. Use a fork to shred the king oyster mushrooms lengthways into thin strips and slice the onion.
  2. Mix the mushrooms and onion with two thirds of the olive oil, the paprika, oregano, cumin, one crushed garlic clove and half the salt.
  3. Cook the mushroom gyros in the air fryer at 200 °C for 12 to 14 minutes, shaking the basket every 4 minutes, until the edges are browned.
  4. Finely shred the white cabbage, grate the carrot and knead both with the apple cider vinegar, caraway, the rest of the olive oil and the remaining salt for 2 minutes.
  5. Stir the second crushed garlic clove and the chopped dill into the soya yoghurt.
  6. Warm the pitta breads in the air fryer at 200 °C for 1 minute and serve with the mushroom gyros, white cabbage salad and garlic dip.

Good to know

King oyster mushrooms pull apart into fibres with a fork, just like meat. In the air fryer the edges turn brown and crisp, and the gyros spices do the rest. Serve with coleslaw like you'd get at a kebab stall.

Swaps

King oyster mushrooms → oyster mushrooms (2 minutes less). Soya yoghurt → Greek yoghurt (not vegan). Wholemeal pitta → air fryer potatoes (gluten-free). White cabbage → sweetheart cabbage.

Cooking tips

Shred the mushrooms thinly so more edges go crisp. The cabbage salad tastes milder after 10 minutes of resting.

Storage

The cabbage salad keeps in the fridge for 3 days, the mushroom gyros for 2 days; crisp it up again in the air fryer at 200 °C for 3 minutes.

Allergens

Vegan; contains gluten (wheat in the pitta) and soya; no milk, egg or nuts. Gluten-free with potatoes instead of pitta.
