Ingredients

Method

You’ll need: air fryer · frying pan · chopping board · knife · sieve

  1. Rinse the beans and roughly mash them with a fork. Mix them with the sweetcorn, half the finely diced onion, the cumin, paprika and salt.
  2. Warm the corn tortillas briefly in a dry frying pan so they become pliable and don't crack when you roll them.
  3. Spread the filling over the tortillas, roll them up tightly and brush with olive oil.
  4. Place the taquitos seam side down in the basket and cook at 200 °C for 8 to 10 minutes without preheating, until crisp.
  5. Dice the tomatoes and the rest of the onion and mix with the chopped coriander, lime juice and a pinch of salt.
  6. Serve the taquitos with the lime salsa.

Good to know

Taquitos are rolled, crispy tacos you eat with your hands. From the air fryer, they don't need a pan full of oil, just a thin brushing.

Swaps

Black beans → kidney beans (same amount). Corn tortillas → wheat tortillas (softer, not gluten-free; choose ones without seed oils). Coriander → parsley. Lime → lemon.

Cooking tips

Choose tortillas made only from corn and without seed oils – then the recipe is gluten-free. A cocktail stick keeps stubborn rolls closed.

Storage

The filling keeps for 3 days in the fridge; the finished taquitos are best eaten fresh.
