Blitz the cauliflower in a food processor to fine cauliflower rice. Finely chop the onion and garlic.
Heat olive oil in a frying pan and cook the onion and garlic until soft and translucent. Add the cauliflower rice and fry it briefly for 2–3 min.
Stir in the almond milk, nutritional yeast and salt. Let everything cook over a gentle heat until the cauliflower risotto is soft and creamy.
Heat olive oil in a second frying pan and sear the veal steak on both sides. Take it out of the pan and let it rest briefly.
Slice the veal steak into strips. Season the cauliflower risotto with a little more salt if needed.
Arrange the creamy cauliflower risotto on plates and lay the steak strips on top.
Good to know
When you want something a bit special in the evening, this dish fits well. It's simple and warm, and still feels like proper cooking.
Swaps
Veal steak → chicken breast (lean protein); almond milk → unsweetened coconut milk (richer, with more fat); nutritional yeast → grated parmesan (provides protein and calcium); olive oil → ghee (heat-stable for searing)
Allergens
The dish contains almonds (almond milk), so it isn't suitable for people with nut allergies. It's generally mild for children, and during pregnancy a well-done veal steak is the safe choice. Contains: tree nuts.
