Ingredients

Method

You’ll need: oven · baking tray · blender · chopping board · knife

  1. Scrape the seeds out of the vanilla pod. Grind just under a third of the coconut sugar with half the vanilla seeds finely in a blender and set it aside for later.
  2. Quickly knead the spelt flour, ground almonds, the rest of the coconut sugar, the rest of the vanilla seeds, salt, egg yolk and cold pieces of butter into a smooth dough.
  3. Wrap the dough in cling film and leave it to rest in the fridge for 30 minutes.
  4. Shape the dough into finger-thick rolls, cut off 40 pieces and bend them into crescents. Place them on a baking tray lined with baking paper.
  5. Bake the Kipferl in a preheated oven at 175 °C (155 °C fan) for 10 to 12 minutes, until the tips are light golden.
  6. Let them cool for 2 minutes and carefully roll them in the vanilla coconut sugar.

Good to know

The cookie tin isn't complete without Vanillekipferl. These melt in the mouth just the same – only the coating is a little darker, because it's made from coconut sugar instead of icing sugar.

Swaps

Spelt flour → plain flour (more classic). Almonds → hazelnuts (stronger). Butter → coconut oil, solid (vegan with linseed instead of egg yolk). Vanilla pod → 1 tsp vanilla powder.

Cooking tips

Work quickly with cold butter, otherwise the dough turns brittle. The Kipferl break easily while warm, so let them cool briefly before rolling them.

Storage

Keeps for 3 weeks in a cookie tin somewhere cool.

Allergens

Contains gluten, almonds, milk and egg; suitable for children and fine during pregnancy.
