Ingredients
50g spelt semolina
300ml almond milk
30g vanilla protein powder (unsweetened)
100g raspberries
1 tsp cinnamon
Method
You’ll need: saucepan · whisk
Heat the almond milk in a small pan until it just starts to simmer.
Slowly sprinkle in the spelt semolina, whisking all the time.
Take the pan off the hob and leave the semolina to swell, covered, for 5 minutes.
Stir the vanilla protein powder vigorously into the hot semolina until there are no lumps left.
Divide the pudding between two bowls and serve warm, topped with fresh raspberries and cinnamon.
Good to know
Semolina pudding brings back childhood memories. With spelt and protein powder, it becomes a great snack after training.
Swaps
Vanilla protein powder → vegan protein powder (to keep the recipe fully plant-based).
Cooking tips
Only stir in the protein powder right at the end. If it boils, whey protein often curdles unpleasantly.
Storage
Pudding is best eaten warm straight away. As it cools, a firm skin forms.
Allergens
Contains gluten (spelt) and, depending on the protein powder, milk (lactose). Contains: tree nuts.
